A delicious, fresh, family dish that you can have on the table in less than 15 minutes!

Ingredients (Serves 4)
2 tbsp olive oil (plus extra for drizzling)
2 large cloves garlic (finely chopped)
3-4 sundried tomatoes (finely chopped)
Large handful of halved cherry tomatoes
250g cooked spaghetti (reserve a little of the pasta water)
3 tbsp toasted pine nuts
Fresh basil (chopped)
Zest and juice of ½ lemon
Large handful of grated parmesan
Instructions
Start by putting the spaghetti on to cook
Whilst the pasta is cooking, gently fry the garlic in the olive oil for a few minutes
Add the sun-dried and cherry tomatoes and cook for another couple of minutes until the cherry tomatoes are soft and squishy, then mix in the cooked pasta with a couple of tbsps of the pasta water
Add the pine nuts, chopped basil, lemon zest and juice and grated parmesan and mix well
Season with a little S&P and drizzle with a little more olive oil before serving
