No kneading, no proving – you can have this on the table in under 45 minutes. We love to top it with grated parmesan, but you could mix in some herbs, seeds, chunks of soft cheese or drizzle some pesto on top!
Ingredients (makes one medium-sized loaf)
150g wholemeal flour
150g plain flour
½ tsp bicarbonate of soda
Large pinch of salt
2 tbsp olive oil
Your choice of toppings
Preheat the oven to 200C (180C fan)
Mix all of the dry ingredients together in a large bowl
Whisk the buttermilk and oil together in a jug, then add them to the bowl
Mix well and gradually bring the dough together into a ball (if it’s too dry add a drop more buttermilk)
Shape the dough into a cob and place it on an oven tray lined with baking paper
Make a deep cross in the top of the loaf using the handle of a wooden spoon, then add your toppings
Bake on the bottom shelf of the oven for 30-35 mins
Serve warm, slathered with lots of butter!
