Cheese & Ham Pancakes

I love a ten minute tea, and this is a favourite in our house. Also perfect for packed lunches and picnics!

Ingredients (makes 6-8)

110g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
Pinch of salt
150ml milk 
1 large egg
Chopped ham and grated cheese 
Butter (for cooking)


Weigh the flour, baking powder, bicarb and salt into a large mixing bowl

Add the milk and egg and whisk until smooth 

Stir in the ham and cheese (or if you prefer change it up with salmon, feta, mushrooms, peas, grated courgette – almost anything!) 

Get a non-stick frying pan nice and hot, then add a generous knob of butter 

Once the butter has melted add four dollops of the mixture into the pan

(Tip – if you’re making this with kids then decanting the mixture into a jug first can make this easier)

Fry for 2-3 minutes until you start to see bubbles appear on the surface of the pancakes, then flip and fry on the other side for two more minutes until golden brown
